Chef Michael Mayer
Michael Mayer is the Executive Chef of The Westin Fort Lauderdale Beach Resort, a position he has held since 2016. In this capacity he oversees the resort’s food and beverage outlets and develops menus for the property’s restaurants, in-room dining and on-premise meetings and events. Prior to this role, he served as the Executive Chef of Sheraton Austin Hotel at the Capitol in Texas, following his position as the Executive Chef of Little Rock Marriott in Arkansas. Michael’s specialty is Contemporary American, yet his culinary journey throughout the South gave him an affinity for Southern Comfort and Creole, both Louisiana and Caribbean styles.
From an early age and a humble start as a short order line cook in the Mid-West, Michael knew that the culinary arts would be his lifelong passion. Self-taught, he learned from masters all across the United States in bistros, cafes and fine dining restaurants. Eventually he made his way to the Rocky Mountains’, Vail Valley, where he discovered his love for the complexity of hotel food and beverage operations. Here he honed his craft and expanded his experience as part of the opening team of The Ritz-Carlton, Bachelor Gulch in Avon, Colorado, where he met his wife Carolina. Michael continued his growth and culinary passion in Colorado at the Park Hyatt Beaver Creek and The Westin Riverfront Resort and Spa.
Today, with over 40 years of experience in establishments that include world-class resorts and upscale restaurants, Michael continues to hone his craft for menu concept ideation, creation and implementation at The Westin Fort Lauderdale Beach Resort.
